Modhak / Kozhakottai

Materials

  • 1 pack Modak Mix (stuffing)
  • 1 pack Roasted Rice flour Comes with Modhak kit
  • 1 litre Water
  • ½ tsp pure Ghee
  • Salt to taste

Instructions

  • In a pan add 1000 ml or 4.5 cups of water, 1/2 teaspoon oil or ghee and 1/2 tablespoon salt. Keep it on the stovetop.Let this mixture come to a boil. Reduce the flame to simmer
  • Add Grounded modak flour (500g) to the boiling water. Quickly stir and mix the rice flour with the water. Stir till all the rice flour is mixed with the water. Switch off the flame. Remove the pan from the burner and keep on the workplace. Cover the pan with a lid for 4 to 5 minutes.
  • Now take all the dough in a plate or thali or in a bowl. Gather the dough together and begin to knead it. The dough will be hot when you begin to knead. So apply some water on your palms and knead the dough. Knead the dough very well. Knead to a smooth and soft dough without any lumps.
  • Make small balls from the dough. Roll the balls till smooth in your palms. You can also apply some water on your palms, while rolling the balls. They should be smooth in appearance.
  • Take a ball and flatten it with your fingers or on your palms, to a round disc or a shallow bowl shape to a medium thickness. You can keep the edges slightly thin and the center can be thick. Place a few teaspoons of the Grounded stuffing in the center. Press the edges to form a wavy edge and bring it together to form the modak
  • Modak can be shaped in many ways. You can get the modal molds to easily make or use a banana leaf to form half-moon similar like karanji or gujia.

Steaming:

  • Take 2 to 3 cups water in a steamer or idly stand. Heat the water till starts to boil on a high flame. Place the modak in the rack and cover with a cotton or muslin cloth
  • Steam in Medium flame and steam it for 10 – 12 mins.  Switch off the steamer and Modak is ready. You can drizzle some ghee on top and its ready: )
